Ingredients

1-POUND RECIPE

  • 1/3 cup water
  • 1/3 cup milk
  • 1 egg
  • 1 tablespoon butter or margarine
  • 4 teaspoons sugar
  • 3/4 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 2-1/4 cups bread flour
  • 1-1/2 teaspoons Fleischmann's® Bread Machine Yeast
  • 1 egg white
  • 1 tablespoon water
  • sesame seeds

1-1/2-POUND RECIPE

  • 1/2 cup water
  • 1/2 cup milk
  • 1 egg
  • 1 tablespoon butter or margarine
  • 2 tablespoons sugar
  • 1 teaspoon Italian seasoning
  • 3/4 teaspoon salt
  • 3-1/4 cups bread flour
  • 2 teaspoons Fleischmann's® Bread Machine Yeast
  • 1 egg white
  • 1 tablespoon water
  • sesame seeds

Instructions

  1. Add water, milk, egg, butter, sugar, Italian seasoning,salt, bread flour and yeast to bread machine pan in the order suggested by manufacturer. Select dough/manual cycle. Adjust dough consistency if needed using guidelines below.
  2. When cycle is complete, remove dough from machine to a lightly floured surface. If necessary, knead in enough flour to make dough easy to handle. If dough is too elastic, cover and let rest 10 minutes before shaping.
  3. Divide dough into 6 [or 9, if making the 1-1/2 pound recipe] equal pieces. Form each piece into smooth ball. Place on large greased baking sheet. Flatten balls into 4-inch rounds; cover. Let rise in warm, draft-free place until doubled in size, 20 to 30 minutes. Lightly beat egg white and 1 tablespoon water. Brush on buns. Sprinkle with sesame seed.
  4. Bake at 375oF for 12 to 15 minutes or until done.

Herbed Hot Dog Buns

  1. Prepare as above, except shape each portion of dough into a roll about 6 1/2 inches long, tapering ends. Continue as above.
  2. Adjusting Dough Consistency: After mixing for a few minutes, the ingredients should turn into a smooth ball around the kneading blade. If the dough appears too stiff or too soft, add more liquid or flour in 1 teaspoon increments, until the proper consistency is reached. Do not add more than 3 to 4 teaspoons liquid or flour. The machine can not compensate for wide variations and may not bake the larger amount of dough thoroughly.
