Ingredients

  • 3 ripe mashed bananas
  • 1/2 cup neutral oil
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 3/4 cups granulated sugar
  • 125 grams sourdough discard
  • 1 1/2 cups of all-purpose flour
  • 2 teaspoons Fleischmann’s Baking Powder
  • 1/4 teaspoon Fleischmann’s Baking Soda
  • 3/4 teaspoon salt
  • 1/2 cup whole oats

Instructions

  1. Preheat the oven to 350(f) degrees. Line a 12-cup muffin tray with parchment liners.
  2. To a large mixing bowl, add mashed banana, oil, eggs, vanilla, sugar & sourdough discard until well combined.
  3. Sift in flour, Fleischmann’s Baking Powder, Fleischmann’s Baking Soda, salt & oats. Mix until the batter just comes together, but do not over mix.
  4. Evenly divide batter amongst the prepared muffin tray. Bake for 18 to 20 minutes, until the tops bounce back to touch.
