Sourdough Banana Oat Muffins
Ingredients
- 3 ripe mashed bananas
- 1/2 cup neutral oil
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 3/4 cups granulated sugar
- 125 grams sourdough discard
- 1 1/2 cups of all-purpose flour
- 2 teaspoons Fleischmann’s Baking Powder
- 1/4 teaspoon Fleischmann’s Baking Soda
- 3/4 teaspoon salt
- 1/2 cup whole oats

Instructions
- Preheat the oven to 350(f) degrees. Line a 12-cup muffin tray with parchment liners.
- To a large mixing bowl, add mashed banana, oil, eggs, vanilla, sugar & sourdough discard until well combined.
- Sift in flour, Fleischmann’s Baking Powder, Fleischmann’s Baking Soda, salt & oats. Mix until the batter just comes together, but do not over mix.
- Evenly divide batter amongst the prepared muffin tray. Bake for 18 to 20 minutes, until the tops bounce back to touch.
