Chewy Butterscotch Cashew Bars
Ingredients
Crust
- 2 cups (500 ml) all-purpose flour OR whole wheat flour
- 1/2 cup (125 ml) granulated sugar
- 3/4 cup (175ml) butter OR margarine, softened
Topping
- 4 eggs
- 1 cup (250 ml) granulated sugar
- 1 cup (250 ml) Beehive® OR Crown® Golden Syrup
- 1/4 cup (50 ml) butter OR margarine, melted
- 1 package (300 g) butterscotch chips
- 1-1/3 cups (325 ml) cashews, halved

Instructions
- Crust: preheat oven to 350°F (180°C). Grease a 13" x 9" (33 cm x 23 cm) cake pan. Combine all ingredients for crust, mixing until crumbly. Press firmly into prepared pan. Bake in centre of 350°F (180°C) oven for 15-18 minutes, or until light golden.
- Topping: beat eggs, sugar, corn syrup and melted butter until blended. Stir in butterscotch chips and cashews. Pour evenly over crust. Bake for 30-35 minutes longer, or until set and golden. Cool completely in pan on rack then cut into bars.
Recipe Tip: Chill for easy cutting. Store in refrigerator.
