Gluten-Free Peanut Butter and Jelly Waffles
Ingredients
- 1/3 cup butter OR margarine, melted
- 1/4 cup peanut butter
- 1-1/2 cups Fleischmann's® Corn Starch
- 2 tablespoons sugar
- 1 tablespoon Fleischmann's® Baking Powder
- 1/4 teaspoon salt
- 1/4 teaspoon xanthan gum (optional)
- 2 eggs
- 3/4 cup buttermilk
- 1/2 teaspoon pure vanilla extract
Jelly Syrup
- 1/2 cup Crown® Lily White® Corn Syrup
- 1/4 cup jam, jelly OR preserves
- 1/2 teaspoon pure vanilla extract

Instructions
- Blend together butter and peanut butter. Stirin all remaining ingredients and let sit for 2 minutes.
- Place 3/4 to 1-1/2 cups batter in a preheated waffle iron and bake to desired level of browning, about 3 to 5 minutes.
- Serve hot OR cool and freeze in resealable plastic bags for toasting later.
- For Syrup: Mix corn syrup with jam, jelly or preseerves in a small saucepan. Heat on medium heat until well blended and hot; do NOT boil. Stir in vanilla.
